In the South it’s traditional to eat collards and Hoppin’ John–a black-eyed pea dish cooked with ham hocks–on New Year’s Day. The greens represent wealth, the more you eat the more lucrative the year to come will be, and the Hoppin’ John is all about stocking your larders with luck.
