Enlightenment Wines opened Brooklyn’s first, and only, meadery last year. Their honey wines work incredibly well in cocktails of all kinds, including this perfect-for-fall version twist on a Negroni, made with an apple-based mead. You can use your favorite gin, we happen to love Greenhook.
Serves 1Total time: 10 minutes

Ingredients:
1 oz Greenhook Gin
3/4 oz Campari
1.5 oz Enlightenment Wines Fey Apple Mead
Preparation:
Stir all three ingredients together in a shaker and then strain into a rocks glass over ice.
Garnish with fresh herbs (not a citrus peel like a traditional negroni), thyme works particularly well here.
Can be made in batches, as well.
